Hurry Curry Cauliflower

The pickling continues with Alton Brown’s recipe for pickled curry cauliflower.
I didn’t have cumin seed on hand so I used the powder that I did have.
Pretty easy to make and should be tasty with a whole fish and some rice.

  • 1 tablespoon canola oil
  • 1 teaspoon cumin seed
  • 1 teaspoon coriander seed
  • 2 teaspoons curry powder
  • 1 teaspoon fresh ginger, minced
  • 1 whole clove garlic, smashed
  • 1 head cauliflower, cut into florets
  • 1 cup water
  • 1 cup rice wine vinegar
  • 1/2 cup cider vinegar
  • 3 tablespoons sugar
  • 1 teaspoon pickling salt

Next time around I may experiment with adding some raisins or other dried fruits to the brine.
