Fennel and Celery Salad

I pinned this last night while scouring the internet for Christmas dinner ideas, and decided to give it a test drive before serving it up to guests. I wanted something bright to go along with the beef tenderloin, mustard roasted potatoes, and green beans almondine on the menu.
This salad is light, bright, and tastier than I could have imagined. So much so that I couldn’t wait to share it with you.  I’m eating it as I type. Recipe and photo from Mark Bittman. I love his straight forward style, and this is one of his go to recipes, and definitely one of mine now. I think I’ll taste it for a 3rd time just to be sure…
